Ingredients:
Crepes
- 1 cup whole wheat flour
- 3 tbsp butter, melted
- 1 cup milk
- 2 large eggs
- 1/2 cup water
- 1/2 tsp vanilla extract
- pinch of salt
Lemon Sugar
- 1 cup sugar
- 3 small lemons, zest
Instructions
Combine and blend all the ingredients in a food processor until fully mixed. Refrigerate the batter for at least 15 minutes.
Lemon sugar - Blend sugar and lemon zest on high power until sugar is broken down and fully combined with lemon zest.
To make the crepes, heat a non-stick pan and apply some butter or cooking spray. Pour a small ladle of batter into the pan and spread evenly. Cook for 30 seconds on medium heat and flip. Cook for another 10 seconds and remove.
Apply some prepared lemon sugar and top with berries, honey, maple syrup or a hazelnut spread.
