This is one of my favourite tricks to get kids (and grown ups) excited and eat fresh fruits. It takes minutes to get the preparation done and you have the ideal summer fruit ready for all. Doesn’t look like my usual photos but wanted to try out something really different and fun! Giving preference to local farm shops; fruit credits @homefields_jsy.
- 2 cups watermelon, diced
- 1 cup plain Greek yoghurt + 1 tbsp honey
- 1 cup kiwi, diced + 1 tbsp honey
Puree the watermelon in a blender until smooth and fill your popsicle moulds until 2/3 full. I have also added a thin slice of kiwi in my moulds for that extra fruit crunch. Freeze for an hour. Insert your popsicle sticks once watermelon purée is slightly frozen.
For the next layer, combine yoghurt with honey and pour it over a watermelon layer in the moulds. Leave enough room for kiwi layer on the top. Freeze for 30 minutes.
Puree the kiwi until smooth and combine with honey. Top up the yoghurt layer with kiwi purée and freeze for at least 4 hours or overnight.
