Description: Everyone’s favourite Homemade Tacos are perfect as starters and busy weeknight dinners. There are so many different ways tacos are made all over the world. This is not the classic Tex-Mex version of Tacos but a healthier veggie bean option. I have also added recipe for chicken and refried bean version if you fancy a meaty one. The bean filling can be frozen for a couple of months and you can easily whip one in few minutes when you are urging for a bean taco on the busier nights.
Salsa:
- 1 medium sized chopped onion
- 2 small chopped tomatoes
- 2 chopped green chillies/jalapenos (Optional – can use non spicy ones for additional flavour)
- 2 tbsp chopped fresh parsley
- 1 tsp salt
- 1 tsp lemon juice
- 1/2 tsp tabasco for authentic flavour.
Mix all the ingredients well and your salsa is ready!.
Guacamole:
- 2 avocados chopped
- 1 tsp salt
- 1 tbsp cream
- 1 tsp lemon juice.
Combine all ingredients together and whisk for a few seconds. Let it remain a little chunky..
Bean filling:
- 1.5 cups pinto beans/red kidney beans/black beans/white beans soaked overnight (Alternatively use store bought refried beans).
- 2 chopped tomatoes,
- 1 medium-sized chopped onion
- 1 chopped red/green pepper (can use both half and half)
- 3 cloves of garlic
- 2 tbsp oil
- 1 tsp salt
- 1 tsp chilli powder (optional)
- 1/2 tsp cumin powder.
Saute onions and garlic in 2 tbsp of oil in a hot pan for a few minutes. Add peppers and saute a few more minutes. Add tomatoes, salt, cumin and chili powder, mix well and cook for further 5-10 minutes. Add your soaked beans and mix well. Your bean filling is now ready!
Shredded chicken:
- 2 chicken breasts
- 1 tbsp oil
- salt, pepper for seasoning
- 1 cube chicken stock
Sprinkle some salt and pepper on 2 chicken breast fillets. Pour 1 tbsp oil on a hot pan and cook chicken breasts for a couple of minutes on both sides. Add 1 cube chicken stock in 2 cups of hot water and add it to the chicken breasts. Cover and let it cook for around 10 minutes or until chicken is completely cooked. Now get rid of the water and shred the chicken with a couple of forks or with a shredder.
Assembling the taco:
Firstly, start by adding 1-2 tbsp of prepared bean mix. Add 1 tbsp of shredded chicken and some shredded iceberg lettuce. Layer it up with 1 tbsp of salsa and add a dollop of prepared guacamole. Finally garnish with sour cream and/or grated cheese. If you like warm tacos, you can even heat them in the oven at 200C for around 5-10 minutes or until the cheese melts. Voila! your mouth-watering tacos are ready!
