For those who haven’t heard of Thandai, it is a cool refreshing drink and is served during Holi which is a festival of colours. In case wondering why at Holi then the answer is that it is the advent of spring/summer and what better way to get your body and mind ready to beat the heat than have a cool drink which is full of antioxidants, boosts energy and immunity and acts as a natural detoxifier.Typical Thandai masala consists of nuts, black pepper, fennel & poppy seeds, dried rose petals & saffron. I have taken the good old traditional drink and made it into an ice cream which is a homage to the lovely festival of Holi.
