THANDAI ICECREAM (No churn & eggless)

For those who haven’t heard of Thandai, it is a cool refreshing drink and is served during Holi which is a festival of colours. In case wondering why at Holi then the answer is that it is the advent of spring/summer and what better way to get your body and mind ready to beat the heat than have a cool drink which is full of antioxidants, boosts energy and immunity and acts as a natural detoxifier.Typical Thandai masala consists of nuts,black pepper,fennel & poppy seeds,dried rose petals & saffron. I have taken the good old traditional drink and made it into an ice cream which is a homage to the lovely festival of Holi.


Ingredients

  • 3/4 cup Whole milk
  • 600g Double cream
  • 300g Condensed milk
  • 3 tbsp Thandai masala (Recipe by @cookwithmanali)
  • 1 tbsp Pistachio, chopped
  • 1 tbsp Almonds, chopped
  • 1 tbsp dried Rose Petals

Instructions

  • Simmer half of double cream, milk & thandai masala in a hot bottom pan for around 5 mins.
  • Once cool, add the rest of the cream, condensed milk & blend for a few minutes until light & creamy. Add the dried fruits & rose petals, mix well & freeze overnight or for 6-8 hrs.
