SZECHUAN CHICKEN DRUMSTICKS

Description: This Indo Chinese version is an explosion of flavours. It is made by tossing chicken in spicy, sour, hot & tongue tickling Szechuan sauce. This version is well known and loved for its bold flavours which comes from the generous use of garlic, chillies and pepper. This dish is also very versatile as you can make it with any vegetables you have on hand. We like it hot and spicy however, feel free to reduce chilli powder or omit green chillies. If you are craving for some hot and flavourful Asian food, then you should definitely try out this mouthwatering dish.

Ingredients:

For marination:

  • 6 chicken drumsticks
  • 3 tbsp plain flour
  • 2 tbsp corn flour
  • 2 tbsp ginger garlic paste
  • 1,1/2 tsp red chilli powder
  • 1 tbsp Szechuan sauce
  • 1 tsp black pepper
  • 1 tsp lemon juice
  • 1,1/2 tsp salt
  • 2-3 tbsp oil to shallow fry chicken

For the sauce:

  • 1 tbsp oil
  • 1 tbsp garlic, finely chopped
  • 1 tbsp ginger, finely chopped
  • 2 green chillies, chopped
  • 1 onion, finely chopped
  • 1/2 cup pepper, chopped
  • 1/2 cup cabbage, finely chopped
  • 1 tsp salt
  • 1 tbsp Szechuan sauce
  • 1 tsp red chilli powder
  • 1 tbsp tomato ketchup
  • 1/2 tbsp soya sauce
  • 1/2 tsp vinegar
  • 1 cup cornflour paste (1 tbsp cornflour + 1 cup water)

Servings 6 drumsticks

Instructions

  • Mix all the ingredients to make a thick paste and marinate chicken drumsticks in the mix for 3-4 hours in the fridge.
  • Fry the chicken for 10-15 minutes in 2-3 tbsp oil. Make sure to turn over the drumsticks and cook both the sides (You can even cook the chicken in the oven at 180°C for around 40-45 minutes). Set aside and place the chicken drumsticks on a kitchen towel to remove excess oil.
  • For the sauce, heat some oil in a pan and sauté chopped garlic, ginger and green chillies for a few seconds. Add onions and sauté for a few more seconds. Furthermore, add peppers, cabbage and let the vegetables cook on a medium flame for around 5 minutes.
  • Add salt, red chilli powder, ketchup, soya sauce, Szechuan sauce, vinegar, corn flour paste and mix well. Pour the sauce over the prepared drumsticks and enjoy!!
