So many benefits of humble ginger in food and drinks…especially seen in Asian meals…but I have gone ahead and made it even better by adding it to gin! It’s Friday and I bet you all are waiting to sip your favourite cocktail!

Thanks to fresh local produce from @homefields_jsy , here’s my go at gin and tonic with a twist by adding sweet rhubarb and ginger simple syrup.


Rhubarb ginger simple syrup –

  • 1 cup rhubarb, diced
  • 1 inch ginger, grated
  • 1 cup water
  • 1/2 cup sugar
  • Gin, tonic water, ice cubes

Servings 4


  • Heat rhubarb, water, sugar and ginger in a small pot and bring to a boil. Lower the heat and simmer for another 10 mins. Once the mixture is cool, sieve through making sure not to squeeze the rhubarb as that would make the syrup cloudy. This simple syrup can be stored in the refrigerator for a week.
  • To assemble the drink, pour around 3 tbsp of simple syrup over ice cubes, complete with your favourite gin and tonic water.
