RED LENTIL, PUMPKIN AND CARROT SOUP

Ingredients

  • 2, 1/2 cups pumpkin, chopped
  • 2 carrots, chopped
  • 2 tbsp olive oil
  • 1 red onion, chopped
  • 2-3 garlic cloves, chopped
  • 1 cup split red lentils
  • 1/2 – 1 tsp cumin
  • 1, 1/2 teaspoons dried thyme
  • salt and pepper to taste
  • 400ml vegetable stock, hot
  • paprika and fresh thyme for garnishing

Instructions

  • Rinse red lentils a couple of times with fresh water.
  • Heat 2 tbsp oil in a large pot and saute ́ some garlic and onion until soft. Add pumpkin and carrot to the pot and cook, stirring occasionally, until well browned (about 10 minutes).
  • Add the red lentils, cumin, thyme and stir for 1-2 minutes. Add stock, salt and pepper and bring to a boil. Reduce heat to a simmer and cook until the lentils are soft and tender (about 20-30 minutes).
  • Blend until smooth. Add water as necessary to adjust the consistency. Taste and adjust salt, pepper, cumin and thyme. Serve it hot!!
