Ingredients
- 2, 1/2 cups pumpkin, chopped
- 2 carrots, chopped
- 2 tbsp olive oil
- 1 red onion, chopped
- 2-3 garlic cloves, chopped
- 1 cup split red lentils
- 1/2 – 1 tsp cumin
- 1, 1/2 teaspoons dried thyme
- salt and pepper to taste
- 400ml vegetable stock, hot
- paprika and fresh thyme for garnishing
Instructions
Rinse red lentils a couple of times with fresh water.
Heat 2 tbsp oil in a large pot and saute ́ some garlic and onion until soft. Add pumpkin and carrot to the pot and cook, stirring occasionally, until well browned (about 10 minutes).
Add the red lentils, cumin, thyme and stir for 1-2 minutes. Add stock, salt and pepper and bring to a boil. Reduce heat to a simmer and cook until the lentils are soft and tender (about 20-30 minutes).
Blend until smooth. Add water as necessary to adjust the consistency. Taste and adjust salt, pepper, cumin and thyme. Serve it hot!!
