Description: Now already been made twice in this one week, this yum fruit cake is our new favourite! Very comforting and refreshing with coconut, it tastes great served with your everyday hot beverage or even served warm as a dessert with cream, yoghurt or some vanilla icecream. Feel free to substitute plums with any other stone fruit or berries.

  • 1 cup granulated sugar
  • 1 cup greek yoghurt
  • 2/3 cup olive oil
  • 2 eggs
  • 1/2 tbsp lemon zest, finely grated
  • 250g self-raising flour
  • 1 cup dessicated coconut
  • 1 tsp baking powder
  • 4-5 plums, thinly sliced
  • 1,1/2 tbsp granulated sugar, for sprinkling


  • Preheat oven to 160°C.
  • Whisk the sugar, yoghurt, oil, eggs and lemon zest until combined. Add in flour, coconut and baking powder and mix well.
  • Fold the mixture into a well greased and lined tin, place plum slices over and sprinkle with some granulated sugar. Bake for around 50 minutes until a skewer inserted comes out clean. Stay aside to cool, slice and enjoy!
