Oat Pancakes

Description: Who wouldn’t relish the idea of pancakes for a Sunday brunch and especially if they are nutritious and satisfying! These mini Banana Oat Pancakes are made colourful by fresh strawberry and blueberry purées and are rich in protein. Needless to say they are no less fluffy and flavourful!

Servings 8-10 pancakes (or around 30 mini pancakes).

Ingredients

  • 1& 1/2 cups rolled oats crushed
  • 1/2 cup blueberry puréed or 1/2 cup strawberry puréed (optional)
  • 1/2 cup almond milk
  • 2 eggs
  • 1 egg white
  • 1 banana
  • 1 1/2 tbsp honey (or 2 tbsp maple syrup)
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract (optional)..

Instructions

  • Blend all the ingredients until smooth. Spray some oil or butter on a hot nonstick pan and pour 1/2 to 1 tbsp batter in round circles.
  • Cook for 2-3 minutes on a medium flame. Turn over and cook for another 1-2 minutes.
  • Drizzle with the syrup, cream and fruits of your choice.
