MANCHURIAN WITH GRAVY

Description: My love for Indo Chinese food has no boundaries! Veg Manchurian is a very scrumptious vegetarian alternative to the popular chicken or meat Manchurian options. This is an Indo Chinese dish of fried veggie balls in a sweet, tangy and spicy sauce. You can either serve it dry as a party starter or appetizer or as a side dish with fried rice or noodles. It is completely unrestricted with respect to what veggies you would like to add in your Manchurian but make sure they are chopped finely for binding.

Ingredients:

Manchurian balls:

  • 1 cup cabbage, shredded
  • 1 carrot, grated
  • 4 tbsp spring onion, chopped
  • ½ onion, finely chopped
  • 1 green chilli, chopped
  • 1 tbsp ginger garlic paste
  • 1 tsp salt
  • 1/2 tsp black pepper ground
  • 3 tbsp plain flour
  • 3 tbsp cornflour
  • oil for frying

Gravy:

  • 2 tbsp oil
  • 1 inch ginger, finely chopped
  • 5-6 cloves garlic, finely chopped
  • 2 chillies, slit
  • 2 tbsp spring onion, chopped
  • ½ onion, finely chopped
  • ½ pepper, sliced
  • 2 tbsp vinegar
  • 2 tbsp soy sauce
  • 1 tsp chilli sauce
  • 2 tbsp tomato sauce
  • ½ tsp pepper powder
  • 1 tsp salt
  • 1 cup water
  • 2 tbsp spring onion, for seasoning
  • 2 tsp cornflour + 1/2 cup water for cornflour slurry

Instructions:

Manchurian balls:

  • Mix all the veggies and salt in a large bowl making sure everything is combined well.
  • Further, add plain flour and cornflour and mix well. Form a soft dough adding more plain flour as required.
  • Prepare small sized balls and deep fry in hot oil keeping the flame on medium. Stir occasionally, until the balls turn golden brown. Drain off the excess oil on a kitchen towel and keep aside.

Manchurian gravy:

  • Heat 2 tbsp oil in a large wok and saute ginger, garlic, chilli and spring onion.
  • Further, add onion and pepper and stir fry on high flame until it shrinks slightly.
  • Add vinegar, soy sauce, chilli sauce, ketchup, pepper powder and salt and stir fry on medium flame making sure all the sauces are well combined.
  • Add water and corn flour slurry and continue to boil the gravy on a medium flame until it thickens and turns glossy.
  • Add in manchurian balls and season with some spring onion. Serve it hot with fried rice.

Servings For 20 small to medium sized balls
