In the frame is a flavoursome Lemon Tart which was a perfect baking project for my kids at home! It’s summer holidays here and I want to make sure kids are occupied and interested. This is a very easy recipe and can be put together in advance for the guests! Pleased with the result and kids were busy munching on it.


For the crust:

  • 1 cup plain flour
  • 110g unsalted butter, melted
  • 4 tbsp icing sugar

For the lemon filling:

  • ¼ cup whipping cream
  • ¼ cup granulated sugar
  • 2 medium eggs
  • 1/3 cup lemon juice

  • Combine flour, butter and icing sugar to form a soft dough. Place this dough on to the well greased tart tin base and press evenly up the sides. Pierce the dough several times with a fork. Bake at 190°C for around 20 minutes & let it cool. Reduce oven temperature to 150°C.
  • Whisk sugar, eggs, cream and lemon juice in a bowl & carefully transfer into the baked tart base. Bake again for around 35 mins. or until the filling is set. Let the tart cool down completely before removing it from the tin.
