Description: I added a pop of lovely purple colour using some edible blue butterfly pea flowers. Enjoy these popsicles before the hot weather disappears and have a great start to the weekend!!
- 75ml gin
- 250ml tonic water
- 60g caster sugar
- 7-8 butterfly pea flowers (optional)
- 6 cucumber slices
- Handful mint leaves
For a six-hole popsicle mould, combine gin with tonic water and caster sugar. Add a few butterfly blue pea flowers and leave it aside until the colour is changed to purple.
Push a thin slice of cucumber and couple of mint leaves into each mould and fill the moulds with the coloured gin and tonic mix. Freeze for 5-6 hours or overnight.
