Description: These GARLIC KNOTS are such a brilliant  party treat!! So easy to make and the best way to use leftover pizza dough, these garlicky, buttery rolls are so crusty from the outside and light and airy from the inside. They say you should make twice as many as you think you’ll need! Try it with some marinara sauce and I bet your hands will be reaching out for more before you know it! Ingredients:

Dough

  • 7g yeast (1 sachet) 
  • 300ml lukewarm water
  • 1 tbsp sugar
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp garlic powder (I used 1 tsp paste)
  • 3, 1/2 cups all-purpose flour 

Topping

  • 4 tbsp salted butter, melted
  • 1 tsp garlic paste (can also fresh garlic)
  • 1 tsp Oregano
  • 2 tbsp parmesan cheese (after baking) 
  • Fresh parsley (after baking)

Servings 16 knots

Instructions

  • Mix yeast, water & sugar together in a large bowl, cover & allow to rest for 5-10mins. until it turns all foamy.
  • Add olive oil, salt, garlic powder & add the flour in batches while mixing with a spatula at the same time. Shift the dough out onto a lightly floured surface & knead the dough for further 5 mins. until it is soft and slowly bounces back on poking a finger.
  • Place the dough in a lightly greased bowl, cover with a cling film and allow the dough to rise at RT for 1-2 hours or until doubled in size.
  • Punch the dough once ready to release the air. On a lightly floured surface, shape the dough into approx. 16×5 inch log. Slice into 16, 1-inch strips using a sharp knife & roll each strip into 8 inch ropes. Tie each into knots & tuck the two ends of the knots underneath the knot. Arrange the knots on lined baking sheets & lightly cover. Let them rest for approx 1/2 hour.
  • For the topping, mix the melted butter,garlic,oregano & lightly brush on the knots. Reserve some of the topping for after baking.
  • Meanwhile, preheat the oven to 200C and bake the knots for about 20 mins. or until golden brown on top.Remove from the oven & brush the warm knots with remaining garlic butter. Sprinkle with parmesan cheese and/or parsley.
