This 2 ingredient mango mousse is definitely a winner!! Mango for me is summer and I know we are a few months away but couldn’t resist using the mango pulp sitting in my pantry for the last few months and starting my summer a bit early. Mango pulp comes in so handy when you are missing those lovely mangoes and can’t wait for that massive stock to arrive! This is such a refreshing, light dessert and so easy to make that it is a must. Combine that lovely sweetness from mangoes with the tartness of the berries and you will not regret it. I’m sure this mousse would be even better with fresh mangoes, however feel free to adjust the sweetness accordingly.
- 400ml whipping cream
- 1, 2/3 cups mango pulp
- fresh mint leaves & berries for garnish
Beat the whipping cream with an electric whisk until soft peaks form. Leave half a cup of this whipped cream aside in the fridge to serve as a topping (optional).
Add in the mango pulp and beat again for a few more minutes. Scoop in the mousse in your serving bowls and leave to set in the fridge for at least 4 hours or overnight. Serve chilled with some whipped cream and fruits of your choice.
