Who wouldn’t love some fudgy chocolatey brownies with a scoop of vanilla ice cream?

Whenever I post desserts, I always get DMs for the eggless version so I gave these oh so gooey brownies a try with some yoghurt rather than eggs…took a couple of attempts where they turned quite dry but finally this eggless version has been our favourite! Brownies turned out soft, fudgy and so indulgent.

Servings 9

  • 3/4 cup all purpose flour
  • 1 cup white granulated sugar
  • 1/3 cup unsweetened good quality cocoa powder
  • 2 tsp baking powder
  • a pinch of salt
  • 1/2 cup unsalted butter, melted
  • 2/3 cup yoghurt
  • 1/2 tsp vanilla extract
  • 1/2 cup chocolate chips

  • Preheat the oven at 180°C. Lightly grease a square tin & line with a parchment paper.
  • Mix and combine all the dry ingredients (flour, sugar, cocoa, baking powder & salt).
  • Beat together the melted and cooled butter, yoghurt and vanilla.
  • Sift in the dry ingredients into the butter yoghurt mix. Add in the chocolate chips and combine. Do not over mix.
  • Pour the batter into the prepared pan/tin. Even the top with a spatula and tap the pan few times to remove any air bubbles.
  • Bake it into the preheated oven for 25-30 minutes.
