Who wouldn’t love some fudgy chocolatey brownies with a scoop of vanilla ice cream?
Whenever I post desserts, I always get DMs for the eggless version so I gave these oh so gooey brownies a try with some yoghurt rather than eggs…took a couple of attempts where they turned quite dry but finally this eggless version has been our favourite! Brownies turned out soft, fudgy and so indulgent.
Ingredients
- 3/4 cup all purpose flour
- 1 cup white granulated sugar
- 1/3 cup unsweetened good quality cocoa powder
- 2 tsp baking powder
- a pinch of salt
- 1/2 cup unsalted butter, melted
- 2/3 cup yoghurt
- 1/2 tsp vanilla extract
- 1/2 cup chocolate chips
Instructions
Preheat the oven at 180°C. Lightly grease a square tin & line with a parchment paper.
Mix and combine all the dry ingredients (flour, sugar, cocoa, baking powder & salt).
Beat together the melted and cooled butter, yoghurt and vanilla.
Sift in the dry ingredients into the butter yoghurt mix. Add in the chocolate chips and combine. Do not over mix.
Pour the batter into the prepared pan/tin. Even the top with a spatula and tap the pan few times to remove any air bubbles.
Bake it into the preheated oven for 25-30 minutes.
