EGGLESS CHOCOLATE MUFFINS with chocolate chips

I had two very good reasons to make these. First get the eggless recipes going as I get loads of requests asking for eggless baking and it meant me going out of my comfort zone, so pleased they came out so well. Second, I wanted to hone my photography skills by getting the smoke effect in natural light without use of any special gizmos or effects. Super glad both were a success.

Ingredients

  • 1.5 cup plain flour
  • 1 cup sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 cup milk
  • 1/3 cup oil
  • 1.5 tsp vanilla extract
  • 1 tbsp vinegar
  • 1 chocolate chips, divided

Instructions

  • Preheat the oven at 180C & line the muffin tray.
  • Recipe is as simple as mixing dry & wet ingredients separately & then gently folding in together to make a smooth lump free batter.Very important is to sieve all the dry ingredients,this will make the muffins light & spongy.
  • Add 1/2 cup chocolate chips & vinegar to the mixture,mix & set aside for 5-10 mins.
  • Pour the mix up to ¾ of each mould & sprinkle rest of choc chips over the top.
  • Bake for around 25 mins. or until the toothpick comes out clean.
