Description:
Time for some weekend treat!! This is a super quick way to make these mocha doughnuts….a little treat for doing well with clean eating on the weekdays!
Ingredients:
- 35g olive oil
- 180g plain flour
- 170g yoghurt
- 80g milk
- 100g sugar
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1/2 tsp salt
- 2 eggs medium
- 1/2 tsp vanilla extract
Chocolate coffee glaze:
- 1 bar (150g) 60% dark chocolate
- 1 tbsp unsalted butter
- 2 tbsp cream
- 1 tbsp coffee dissolved in 2 tbsp hot water
Instructions
Preheat oven to 170C and grease two small 6-hole donuts moulds.
Combine all dry ingredients and mix well. Repeat the same process for all the wet ingredients.
Mix wet and dry ingredients together with an electric whisker.
Divide between 12 donut holes until 2/3 full and bake for 10-12 minutes at 170C until golden and cooked. Set aside to cool.
Meanwhile to prepare the topping, melt dark chocolate in a bowl over some hot water in a pan. Fold in butter, cream & coffee & mix well. Dip top half of the donut into this mocha mix and leave on a wire rack to set and drip out excess chocolate.
