Yuletide is upon us and what better way to celebrate and indulge oneself….Christmas pudding/cake anyone!? In case you don’t have enough time to make it, here’s my take to make it super easy and quick. It will be done within the hour.
Ingredients
- 150g butter, at room temperature
- ½ cup brown sugar
- 2 eggs
- premixed dry fruits soaked in brandy (I used 410 g Waitrose Christmas brandy mincemeat which had sultanas, currants & raisins in 7 % brandy)
- 1, ½ tsp mixed spice
- ½ tsp vanilla extract
- ½ cup cranberry sauce
- ½ cup plain flour
- 2 cups fresh bread crumbs
Instructions
Beat 150g soft butter with 1/2 cup brown sugar.
Beat 2 eggs in the butter & sugar mix (1 egg at a time) and add premixed dry fruits soaked in brandy.
Further add mixed spice, vanilla extract, cranberry sauce, plain flour, fresh bread crumbs and combine all the ingredients well.
Grease well a round microwaveable bowl, line the bottom of the bowl with parchment paper & transfer the pudding mix in the bowl. Cover again with parchment paper & microwave on 40% power for 35 mins. Leave to cool in the microwave for another 15 minutes before serving.
