Description:
A simple and easy to make dessert made with the help of Greek yoghurt blended with some cream and condensed milk and baked with a water bath in the oven. The sweetness of the pudding is topped up with the sweet and sour taste of berries giving it a light but very refreshing dessert for your dinner table. This dessert is also called Bhapa Doi in India and originates from West Bengal. It’s a very popular dish in the eastern states of India during weddings and special occasions.There are now many variations of this pudding available with all sorts of fruits flavours; I have tried this with some melted chocolate and it definitely was worth the effort when I saw the smile appearing on the little faces.
Ingredients
- 200g condensed milk
- 200g heavy cream
- 200g yoghurt + 2 tbsp (for mixing with melted chocolate)
- 2 tbsp melted chocolate (I used 70%dark chocolate)
- berries, mint leaves & edible flowers (optional)
Instructions
Heat up the oven at 180C.
Combine condensed milk, heavy cream & yoghurt with a whisker.
Mix melted chocolate with yoghurt well and fold into the cream-yoghurt mixture. Microwave the mix for a minute if chocolate forms lumps.
Pour into your ramekins and bake for 9-10 minutes in a water bath. This stops it from going dry and ensures no cracks in your pudding.
Once cool, refrigerate these puddings for a few hours or overnight. Garnish with berries, mint & serve chilled.
