Description: I love quesadillas for a number of reasons and to name a few….they are quick and easy to make….you can fill in with all sorts of veg and meat options but foremost it brings the flavours alive in a very short investment of time….kids and adults all love it! I have gone with these chilli spring onion and sweet corn quesadillas which are a yummy twist to the traditional Mexican quesadillas. Enjoy with chilli sauce or just on its own, I bet you will want to eat them again and again. Sooo, let’s get cooking!!!!!
Ingredients
1 tbsp oil
1 onion, finely chopped
1 cup sweetcorn , boiled or canned
4 spring onions , sliced
½ red chilli, finely chopped
½ tsp ground coriander
½ tsp salt
¼ tsp pepper
½ tsp oregano
1 lime , zested
2 large tortillas
30g cheddar , grated
30g mozzarella , grated
Instructions
Heat oil in a pan and fry onions until softened. Add chilli, sweetcorn, spring onions, lime zest, ground coriander, salt, pepper and oregano. Mix well and cook for further 3-4 minutes.
Lay 1 tortilla wrap on a hot frying pan , then pile your sweetcorn and spring onion mixture on the tortilla and top up with cheddar, mozzarella and the second tortilla. Cook for 2-3 minutes until the bottom tortilla is crispy brown. Turn over the quesadilla carefully and cook for further 2 mins until the cheese is melted and the second layer is a nice crispy golden brown too. Cut into four and serve hot with some chilli sauce.
