Description:It’s that time of the year where I just want to be tucked in cosy warm clothes and cosy and warm food too. This is just one of those foods which will help warm your cockles. I present to you the winter addition to your dining table…soup with wholesome red lentils, iron-rich beetroot & zingy ginger.

Servings 4


  • 1 onion, chopped
  • 1 tbsp oil
  • 1 tbsp fresh ginger paste
  • 1 tsp garlic paste
  • 33g beetroot, boiled and chopped
  • 200g red lentil (pre washed)
  • 500ml veg stock
  • salt, as per taste
  • 1 tsp garam masala
  • toppings (optional) - fresh herbs, seeds and coconut cream


  • Fry chopped onion in 1 tbsp oil until soft. Add ginger and garlic paste, and sauté for a further couple of mins.
  • Add chopped boiled beetroot & cook for a minute. Stir in red lentil along with veg stock. Add salt and simmer for around 10 mins. or until the lentils are fully cooked.
  • Blend the soup until smooth and adjust the consistency as required. Add 1 tsp garam masala, mix and garnish with some fresh herbs, seeds and coconut cream.
