Description:It’s that time of the year where I just want to be tucked in cosy warm clothes and cosy and warm food too. This is just one of those foods which will help warm your cockles. I present to you the winter addition to your dining table…soup with wholesome red lentils, iron-rich beetroot & zingy ginger.
Ingredients
- 1 onion, chopped
- 1 tbsp oil
- 1 tbsp fresh ginger paste
- 1 tsp garlic paste
- 33g beetroot, boiled and chopped
- 200g red lentil (pre washed)
- 500ml veg stock
- salt, as per taste
- 1 tsp garam masala
- toppings (optional) - fresh herbs, seeds and coconut cream
Instructions
Fry chopped onion in 1 tbsp oil until soft. Add ginger and garlic paste, and sauté for a further couple of mins.
Add chopped boiled beetroot & cook for a minute. Stir in red lentil along with veg stock. Add salt and simmer for around 10 mins. or until the lentils are fully cooked.
Blend the soup until smooth and adjust the consistency as required. Add 1 tsp garam masala, mix and garnish with some fresh herbs, seeds and coconut cream.
