Description: Baking traditional Tiramisu dessert is not a very quick and easy task so ever since I came across this lovely no bake recipe by very talented Deeba @passionateaboutbaking , I couldn’t give it a miss. I had only made enough for two small serving glasses and have to admit, I repent not having made more. Nevertheless, it’s quick so I have consoled my not so satisfied daughter and husband that they will definitely get to have some more in the weekend!!
Ingredients
- 4-5 chocolate cookies per serving (I used Molly’s chocolate chip cookies)
- 3 tbsp coffee (I used Kenco)
- 300g chilled mascarpone
- 200g chilled double cream
- 4 tbsp icing sugar
- 1/2 cup water
- 2 tbsp condensed milk
- Cocoa powder, roasted coffee beans and wafer squares (I used vanilla wafer squares) - optional.
Instructions
Coffee syrup - Microwave 2 tbsp coffee with 1/2 cup water for one minute or heat and mix on gas top until coffee is fully dissolved. Add 2 tbsp condensed milk and let it cool.
Mascarpone coffee cream - Whisk chilled mascarpone cheese with cream, icing sugar and 1 tbsp coffee.
Assemble - Dip about 1 or 2 cookies swiftly into the cool coffee syrup and lay it gently into your dessert bowl. Can break the cookies before dipping for an even and neat layer. Add some mascarpone cream mix and spread it over the cookies. Repeat the above two layers and refrigerate, if required. Sift some cocoa powder over the top. Garnish with some wafer squares and roasted coffee beans (optional).
