Want to make the best use of seasonal citrus fruits?Why not try this easy to prepare & visually beautiful upside down orange cake! The recipe below is adapted from Sylvie’s (@a.baking.journey) recipe for upside down blood orange cake & only takes around 20 minutes preparation time.My three year old demanded a cake & loves orange so this was a match made in heaven!It’s also light & perfect to go with your afternoon tea.
Ingredients:
Orange Layer
- 2 tbsp caster sugar
- 3 oranges
Cake
- 1, 1/2 cup Self-Raising Flour
- 1/2 cup unsalted butter,at room temperature
- 1/2 cup caster sugar
- 3 eggs
- 1/2 cup double cream
- 2 medium oranges,zest & juice
- 1 tsp vanilla extract
Instructions
Line a 6.5” cake tin & sprinkle the sugar into an even layer at the bottom.
Thinly slice the oranges and arrange them over the sugar layer.Feel free to remove the orange peel if you don’t prefer the slight bitter taste
Cake
Cream the soft butter & sugar until fluffy & doubled in volume,using an electric whisker.
Mix in the eggs one at the time.Fold in the cream,vanilla,orange zest & juice.Mix until all combined.
Sift in the flour & combine,don’t over-mix.
Pour the batter over the sliced orange layer & bake for around 45-50 mins. in a preheated oven at 180°C or until a skewer comes out clean. Leave to cool down completely before removing the pan & flipping the cake over.
