Description: Tomato and basil soup is a favourite of mine and is super easy to make, yet tastes super delicious! It is a perfect light meal and can be made with fresh tomatoes. The thick and creamy tomato soup is brought to life here with garlic and fresh basil. I guarantee you’ll never want to go back to the canned tomatoes or canned soup after this!

Ingredients:
- 6/7 chopped tomatoes
- 1 medium sized chopped carrot
- 1 onion finely chopped
- Fresh basil leaves chopped
- 4 clove garlic
- 2 tsp butter or 2tsp olive oil
- 2/3 bay leaves
- 2 tsp salt
- 2 cups water
- 1 tsp sugar
- 1 tsp pepper crushed
- Italian seasoning
- 4 tbsp cream
Recipe:
- Heat butter/olive oil in a pan and saute onion, garlic and bay leaves for 2-3 minutes or until onion starts to become translucent.
- Add chopped tomatoes, carrots, salt and saute for a minute or till tomatoes change colour. Tip: Can also add beetroot for red colour and sweetness.
- Add 1 cup water and chopped basil leaves. Cover and boil for 10 minutes or until tomatoes turn soft and mushy.
- Remove the bay leaf and cool the mixture. Blend to a smooth paste without adding any water and discard the residue from the tomato paste using a sieve.
- Add sugar, pepper and 1 cup water or more, adjusting consistency and get the soup to a boil.
- Turn off the flame and add cream, mix well
- Finally garnish with basil leaves, oregano and cream and serve the soup hot with bread, croutons or bread sticks.
