I used to live in Scotland a few years ago and my first experience of shortbread cookies was in Glasgow. Loved every bit of them, especially the buttery taste. Here’s my spin to the very buttery shortbread and what better way to celebrate Valentine’s Day with heart shaped cookies and your loved ones!
Ingredients
- 1/2 cup butter, soft
- 1/2 cup caster sugar
- 1 cup plain flour
- 2 tsp lavender
- 3 tsp lemon zest
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
Cream together the soft butter & sugar until smooth.Add in the vanilla, lavender, lemon zest & mix well.
Mix together the flour and salt.
Combine dry & wet ingredients & mix to form a dough ball.Wrap & chill in the fridge for at least 30 mins.
Dust some powdered sugar on your worktop & roll the dough out until it’s not too thick or thin.
Cut the cookies with a heart shaped cookie cutter & place on a lined baking tray.Repeat the same with the leftover dough.Freeze the cookies for around 10 mins.Preheat oven to 170°C.
Bake for 10-12 mins. or until the edges are golden brown.
