Description: Don’t think any Indian needs an introduction to Dahi vada. It’s an all time favourite for most of us and is a very popular dish during Diwali. Below is my mother in law’s recipe which I always use and love since the vadas turn out super soft this way.
Instructions
Soak white urad dal (2 cups for around 20 vadas) in hot water for atleast 5 hours. Soaking overnight will make vadas even softer.
Blend/grind the dal with little water, just enough to make a thick paste.
Add 1 tsp salt, 1/2 tsp red chilli powder and 1 tbsp ginger paste and combine well. Add 2 tbsp hot oil to the dal paste and mix thoroughly until it’s foamy and almost double in quantity.
Fry vadas on low flame.
Once the vadas are cool, soak them in water for 15 minutes and apply pressure on vadas with both hands to drain all the water.
Add these vadas to plain yoghurt/curd and add some salt, roasted cumin powder, red chilli powder, chaat masala, coriander and tamarind chutney as per your taste.
