It’s a very popular Indian mithai (sweet) made of roasted gram flour and sugar syrup with a generous garnish of nuts like pistachios, almonds and cashews!

  • 2 cups gram flour
  • 4 tbsp fine semolina
  • 1/2 tsp cardamom powder

Sugar syrup

  • 1 cup sugar
  • 1/2 cup water

Garnish

  • chopped pistachios, cashews, almonds, rose petals and edible golden leaf (optional)

Instructions

  • Roast gram flour and semolina with ghee on low flame in a heavy bottomed pan until it is aromatic and golden brown in colour (around 20-25 minutes). Keep aside.
  • Simple syrup - Combine water with sugar and boil for around 7-8 minutes until it has reached a sticky consistency.
  • Add sugar syrup, cardamom powder to roasted gram flour and semolina mixture and combine quickly. Pour this mixture immediately in a lined tin, garnish with chopped nuts and let it set for an hour at room temperature. Slice into pieces with a knife and enjoy!
