These 4-ingredient yoghurt bites are so easy to prepare yet delightful & full of antioxidants & fibre to improve your digestion & immunity! Whilst everyone is busy posting delicious food like undhiyus, chikkis, etc. for Indian festivals like Makar Sankranti & Lohri, I haven’t had an opportunity to cook anything festive since my little one has been down with Chicken Pox. Thankfully I had prepared this in the weekend. Hope you like it!
Ingredients
- 2 cups mixed berries, fresh or frozen
- 1 cup mixed berries, fresh or frozen, chopped, for sprinkling on the top
- 2 cups Greek yogurt
- 2 tbsp honey (or more depending on your taste)
- 1/2 cup granola
Instructions
Line a baking tray with some parchment paper. (I have used a 9×12 tray as I don’t like my barks too thick or too thin either).
Blend 2 cups mixed berries, yogurt and honey until smooth. Pour this mix onto the tray & use a knife/spatula to make it smooth.
Sprinkle the top with granola & 1 cup chopped berries. Freeze for at least 4 to 5 hours & break the yogurt bark into chunks with your hands. I left these at room temperature for 5 minutes & I was able to cut these into square bites with a sharp knife. These melt in the fridge or left outside for a few minutes so please store them in an airtight container in the freezer & use it within a month.
