If you have been to India or are of Indian origin you’ll know how a cold winter/rainy day can be transformed if there are some great bhajjis to go with some hot Indian tea.India is such a diverse country with great foods all around that I had to bring that to life in my blog. The recipe below comes from Rajasthan;this mirchi vada has a delicious mashed potato stuffing which makes it unique,more flavourful & filling & reduces the heat.This is all about having that array of flavours & texture when you take the first bite & sip that spiced tea!
Ingredients:
- 12 jalapeño chillies,large
Potato stuffing
- 3 medium potatoes,boiled & mashed
- 1/2 tsp red chilli powder
- 1 tsp chaat masala powder
- salt,as per taste
- 1 tsp garam masala powder
- 1/2 tsp carom seeds (ajwain)
- 1 tbsp coriander,finely chopped
- 1 inch ginger,finely chopped
Batter
- 2 cup chickpea/gram flour
- 1 cup water
- 1 tsp red chilli powder
- 1/2 tsp turmeric powder
- 1/2 tsp carom seeds
- 1/4 tsp baking soda
- salt as per taste
- Oil for deep frying
Instructions
Wash,dry & vertically slit the chillies from one side.Scrape out the seeds from the back of a spoon & discard.
Combine all the spices with the boiled,mashed potatoes & stuff this masala in the green chillies.
To make batter,combine all the ingredients mentioned to make a thick paste.Dip the stuffed chillies in this batter & deep fry in medium hot oil on until golden brown.Serve these stuffed fritters with coriander/tamarind date chutney.
