I have brought some of my favourite foods together for this one but have maintained the healthy theme. Chocolate combined with cherry & coconut yoghurt is a brilliant burst of flavours & texture & that’s what I love about it. Nothing stopping you from enjoying this as a breakfast meal & also as a dessert.
Ingredients:
Chocolate chia seed pudding
- 1/2 cup chia seeds
- 2 tbsp cocoa powder
- Pinch of salt
- 1/2 tsp vanilla extract
- 1/4 cup honey
- 2 cups plant based milk
Cherry compote
- 200g cherries, pitted & chopped
- 1 tbsp honey
- 1/2 cup water
Toppings
- Plain Greek/coconut yoghurt
- Fresh fruits of choice
Instructions
Chocolate chia seed pudding-Blend together chia seeds,cocoa powder,salt,vanilla,honey & begin to whisk in milk a little at a time until cocoa powder & chia seeds are well blended.Store in the fridge for 2 hrs or overnight until the pudding has thickened. Whisk again before dividing the pudding into the bowls.
Cherry compote-Add pitted chopped cherries,honey & water in a saucepan; bring it to a simmer & cook for about 2 mins. until cherries have softened & formed a thick sauce form.Let it cool & keep it aside.This compote can also be blended if you like very smooth consistency.
Layer up the cocoa chia seed layer with some cherry compote & coconut yoghurt. Top up with some fresh berries, cocoa nibs or chopped nuts of your choice.
